Mandarin Chicken Cold Pasta Salad

 Amazing Deliciously Cold Pasta Meal For A Hot Day! 




Note:   This is such a great meal for a blazing summer day.  Recommend making in the morning when the house is a little cooler and then let it chill all day in the refrigerator and the flavors combine into a great culinary experience.   

This recipe does not include mandarin oranges, but have found that we like it better without.  But feel free if that is your thing!   


Ingredients 

8        Oz of uncooked salad macaroni 
3/4     Cup Mayo
1/4     Cup Milk
2         t Soy Sauce
2        T toasted sesame seeds
2        Cloves garlic, minced
1/4     t grated fresh ginger
2        C chicken, cooked and shredded
1 1/2  C broccoli, small florets 
1        C green or red pepper, diced
1/4     C green onions, diagonally sliced

Instructions

1.     Cook macaroni, drain, rinse with cold water (Make sure to not over cook!)

2.     In a large bowl combine: mayo, milk, soy sauce, sesame seeds, garlic and ginger.  Mix well.

3.     Add cooked pasta, chicken broccoli, peppers and green onions.  Mix Well

4.     Chill for at least 4 hours

5.     Serve with additional sesame seeds and green onions
