Taco Zucchini Boats

 Finally found a way, besides bread, to enjoy a zucchini!


Note:  All of us who garden grow zucchini and then work to give them away as it grows fast and in quantity.  I ran across this from the Food Wishes Blog, but modified it for convenience.  Loved this recipe.

Ingredients:

1      Large Zucchini- or 2 medium
2/3   Cup diced onion
3      Garlic Cloves chopped fine
1      lbs Hamburger
1      T diced Jalapeno
1      C Tomato Sauce
1/2   C Water
3-4   T McCormick Taco Seasoning- You can use more or less depending on how spicy you want it.
Salt 
Pepper
Grated Cheese of your choice.  I use Tillamook Medium Cheddar or what ever I have on-hand.

Instructions:

1     Wash zucchini and cut in half.  Core out seeds with a spoon or melon baller leaving a boat.  Season with salt and let sit for 20 minutes as you cook the burger mixture.   

2      Preheat oven to 400.

3     Put diced onion and hamburger in a pan and brown.  Make sure to cook all the water from the onions out, but not burn them.  Add the garlic and jalapeno pepper for the last couple of minutes.  Salt and pepper to taste if necessary.   I generally find enough salt in the seasoning.

4     Stir in tomato sauce, taco seasoning and water.  Bring to boil and then reduce to simmer and stir occasionally until thickened.

5     Blot the zucchini with a paper towel to remove excess water from the salt.

6     Put foil on baking sheet and spray with non stick oil.  Put boats on foil and stuff with taco mixture and cover with generous amounts of cheese.

7     Bake for 20 minutes or until a fork can easily go through the zucchini.

8     Top with Tom's, corn chips, sour cream or anything you want.
