Linguine Bacon Ala Carbonara

 So good you'll think you're an Italian Chef!



Note:  This is another super easy recipe that is flat amazing! Very rich though.  Key is to have all your ingredients ready when you start. 

Serves 4-6

Ingredients:

8        Oz of Linguine (can can do more or less depending on how many your feeding)
1/2     lb  bacon, fried crisp and crumbled
6        T butter  
4        Cloves garlic, minced through a press
2        T cream
2        T Chardonnay (be sure to taste test as you cook!)
1.5     C grated Parmesan
Salt and Pepper to taste

Chopped Parsley if desired. 

Instructions:

Cook bacon ahead and set aside then crumble

Bring a salted pot of water to a boil then add linguine

As linguine is cooking, melt butter in a small sauce pan and add minced garlic.  Don't burn.  Just want it  to melt and mixed together.

As linguine is cooking, in a bowl gently mix eggs, cream and wine and set aside

When linguine is done, drain.  Mix in butter and garlic, then add in egg mixture.  Heat from noodles should cook the egg mixture enough, but sometimes we will put it back on the burner we just turned off  and continue mixing until we get the thickness of the sauce we are looking for.

Garnish with more parmesan and bacon.  Also parsley if desired.

Serve quick, it will cool quick.
