We Love Our Soups! This Tastes Just Like Olive Garden's Version
Note: The ingredient list is long, but most of these things you keep on hand. Gnocchi might be the only one you don't, but I always pick one up at the store to replace the one I used and tuck it in the pantry.
Serves 6/7
Ingredients:
7 Slices of Bacon, Thick Preferred
2 T Butter
1 Onion. I like Yellow for this Recipe.
3 Carrots
1 Bay Leaf
2 Medium Sized Potato. Optional- Not in the original recipe, I just like it.
2 Stalks Celery
4 Cloves Garlic
1 Sprig Rosemary Dried can work too.
1/2 t Basil
1/2 t Thyme
1/4 t Poultry Seasoning
1/2 Kosher or Sea Salt
1/2 t Fresh Ground Pepper
4 C Chicken Broth
2 Chicken Breasts. Use quality chicken....you're worth it!
16 Oz Gnocchi
1/2 Cup Parmesan Cheese
3 Oz Baby Spinach
1 Cup Heavy Cream
Instructions
1. Chop bacon into 1/2 pieces. Turn on Instant Pot Saute function and cool bacon until desired crispiness. Drain fat but leave 1-2 t of the bacon grease for more smokey flavor.
2. Add butter, onions, carrot, bay leaf and cook until onions become translucent. Stir every minute or so.
3. Add the celery and cook for another 2 minutes.
4. Press Garlic in and cook for another minute
5. Add the basil, thyme, rosemary, salt, pepper, poultry seasoning and chicken broth. Stir and bring to a simmer.
6. Add bacon and chicken in. Make sure the chicken is submerged in the broth.
7. Turn off saute function, put on lid and lock in place and put the knob in sealing position.
8. Press the pressure cook (Manual) button. Adjust the time to 9 minutes.
9. After 9 minutes, let it count up for another 10 minutes. Then release any remaining steam be turning the knob to venting position. When the pin drops, open the lid.
10 Remove chicken to a cutting board and discard the bay leaf and rosemary stem.
11 Turn on the saute function again and add gnocchi and stir.
12 Gnocchi will rise to the top when done. Give a stir when about have has emerged.
13 While Gnocchi is cooking, shred the chicken.
14 When Gnocchi is done, turn off the saute function. Add in Parmesan, shredded chicken and spinach.
15 Stir in the heavy cream and stir. Let set a minute or two. Serve.
