This is a great recipe with almost any protein. And makes lots! Key is to chill the rice in advance so it is not a giant clump when you cook.
Ingredients
3 tablespoons butter, divided
3 eggs
1 package of frozen mixed veggies of your choice
1 small white or yellow diced onion
3cloves garlic, minced
salt and black pepper
4 cups cooked and chilled jasmine rice
3 green onions. chop up the green part
3–4 T soy sauce, or to taste
2 t fish sauce (if you have it, not required)
1 T sesame oil
Heat 1/2 tablespoon of butter in a large pan over medium-high heat until melted. Add eggs, cook and scramble Remove egg, and transfer to a separate plate.
Cook protein and set aside, this whole thing goes together quickly, so best to have it ready.
Add an additional 1 tablespoon butter to the pan and heat until melted. Add onion and cook for about 5 mins and toss in garlic for about a minute, and season with a generous pinch of salt and pepper.
Add frozen veggies and cook for another 3 mins or so.
Increase heat to high, add in the remaining 1 1/2 tablespoons of butter, and stir until melted. Immediately add the rice, green onions, soy sauce and fish sauce and stir until combined. Continue stirring for an additional 3 minutes to fry the rice. Then add in the eggs and protein and stir to combine.
Remove from heat, and stir in the sesame oil until combined. Taste and season with extra soy sauce, if needed. Serve
