Pork or Chicken Fried Rice
- This is a great recipe with almost any protein. And makes lots! Key is to chill the rice in advance so it is not a giant clump when you cook.
- Ingredients
- 3 tablespoons butter, divided
- 3 eggs
- 1 package of frozen mixed veggies of your choice
- 1 small white or yellow diced onion
- 3 cloves garlic, minced
- salt and black pepper
- 4 cups cooked and chilled jasmine rice
- 3 green onions. chop up the green part
- 3–4 T soy sauce, or to taste
- 2 t fish sauce (if you have it, not required)
- 1 T sesame oil
- Heat 1/2 tablespoon of butter in a large pan over medium-high heat until melted. Add eggs, cook and scramble Remove egg, and transfer to a separate plate.
- Cook protein and set aside, this whole thing goes together quickly, so best to have it ready.
- Add an additional 1 tablespoon butter to the pan and heat until melted. Add onion and cook for about 5 mins and toss in garlic for about a minute, and season with a generous pinch of salt and pepper.
- Add frozen veggies and cook for another 3 mins or so.
- Increase heat to high, add in the remaining 1 1/2 tablespoons of butter, and stir until melted. Immediately add the rice, green onions, soy sauce and fish sauce and stir until combined. Continue stirring for an additional 3 minutes to fry the rice. Then add in the eggs and protein and stir to combine.
- Remove from heat, and stir in the sesame oil until combined. Taste and season with extra soy sauce, if needed. Serve
