Made this up growing up in Omak. Then didn't eat it for almost 25 years.....what was I thinking! So Good!
Ingredients per sandwich
1 Slice of thick cut bologna or two thin slices
1-2 T Mayo
1 Yellow mustard
1-2 Slices of american cheese- I like two
1 T dill relish- Nalley preferred
2 Slices of bread of your choice
1 T butter
Thin slices of onion
Instructions:
Cut an a fairly large X in the bologna so as it cooks it won't cup.
In a pan on medium high heat, melt butter.
Fry Bologna in butter until desired doneness. Flip over and then put on cheese. I will cover here as well to help the cheese melt faster.
As it is frying, combine mayo and mustard and put on bread. Then add the relish and onions.
When done frying and cheese all or mostly melted, transfer to bread.
Super simple, and is really the only way I like bolongna.
