Southwest Steak Bowl with Creamy Jalapeno Sauce

The Best Steak Bowl Ever. Note: One of favorite meals and another one that is super simple. Take the time to make the sauce at least a couple hours in advance. Use the rice as the bed of the bowl. Start with our Season Rice recipe: Comstock Farm Seasoned Rice Bowl Ingredients Skirt Steak 2 Limes (one for juicing, the other as garnishment) 1 Can Black Beans 1 Roasted Red and Yellow Peppers- I like these better than green. This is one of our all time favorite meals. The savory of the home made Pesto Butter and the acid from the tomatoes work perfectly with Halibut. We typically serve with risotto and grilled asparagus. We found this recipe in Cuisine at Home years ago. For the Pesto Butter - Helps to make a day in advance, but can be made day of. Just needs to set up. It also freezes for months. 1 Stick unsalted butter, softened 1 Cup fresh basil leaves 1/4 Cup Parmesan, grated 2 T pine nuts, toasted- very important to toast 2 Cloves of garlic 1/2 t kosher or sea salt 1/4 t red pepper flakes Cream butter, basil, Parmesan, nuts, garlic, salt and pepper flakes together in a food processor. Takes a few minutes and better than anything off the shelf. Note: We love a great Chicken Caesar Salad......really all year around, but Summer in-particular. I think I ran across this recipe at Robert and Lisa Folie's house many years ago. It really is the best and easiest I've found. Tomato credit to The Helman's!
